For over 8000 years wine has continuously been produced in Georgia. Its wine culture is the oldest and one of the most unique in the world. What most visitors find noteworthy is the hospitality, love of life (and freedom) and cuisine of Georgia . The Mother of Georgia statue in Tbilisi exemplifies the culture; welcoming friendship and hospitality with a wine glass in one hand if you come in peace, but fierce defense of their beloved country, demonstrated by the sword in the other hand, if you come with bad intentions like many have over centuries.
Ancient and Modern Natural Winemaking In Harmony
Wine making techniques in Georgia range from ancient traditional to classic modern techniques. Its history is deeply rooted in use of the ceramic vessel ‘Qvevri’ and skin contact fermentation. For example, some Georgian whites are made in the 'Kakhetian style’ in qvevri with skin contact, resulting in characteristic shades of ‘Georgian amber’, robust flavors, and ‘red-wine-like’ tannins. Compared to European varieties, these wines’ contain a higher percentage of antioxidants and polyphenols, both of which are beneficial to health.
