About Pet-Nat

Pét-Nats are known as "rustic" sparkling wines. Delicate and bright, subtle and aromatic, light and refreshing, Pét-Natas (aka Pétillant Naturel, aka Pét-Nat)work perfectly in any gastronomic situation. As an aperitif, for breakfast, paired with cheesecakes ,rolls, or Japanese sushi and sashimi. 

Turbidity and sediment 

Yeast, having processed all or almost all of the available sugar in wine, dies and turns into a sediment, which is responsible for the cloudy substance of wine. Traditional sparkling wine makers, such as those in Champagne, prefer to remove the lees from the wine.  Pét-Nat winemaking, on the other hand, is a naturalist technique and leaves the wine in its unaltered form.

Mtsvane Estate Pet-Nats are left on the lees for the majority of the aging process, and only disgorged right before they leave the winery. The lees are removed in small batches in order to preserve freshness and sparkle, and to preserve the varietal characteristics of taste and aromas. They are kept the high pressure (as for petnata) 4.3 Pa and left unfiltered, giving additional strength and a unique character.
