Royal Khvanchkara -  Tvishi 2022 - Amber Semi-Dry 12.0% Abv.

The grape variety Tsolikouri from Lechkhumi’s village Tvishi, ripens late and
yields a full-bodied, light, straw-colored wine with citrus, white plum and
floral aromas. Due to its high acidity and balanced alcohol, it has the
highest potential for aging. Harvest day is decided when the grapes are fully
responding to the final wine style requirements. That implies varietal aroma
expression besides high crispy acidity and a slight over-maturation to have
grapes capable delivering wine with naturally occurring residual sweetness.
By then, we pick our grapes only manually to ensure the highest quality and
produce the wine using state of the art facilities under world-class
winemaker expertise.

Winemaker Notes

Crushing & de-stemming of grapes and immediate chilling of must at about +41 to 43°F while transferring for juice separation or skin maceration under strict inert gas ambient. Juice separation followed by juice settling under temperature control. Prevention of oxidation while settling the juice to maximize varietal aroma expression. Decantation of clarified juice and its transfer for fermentation at 56 to 59°F. Post fermentation elevage while «sur lie» with strict temperature control. Style balance.
