Mtsvane Estate Georgian Sparkling - Pet-Nat Tsolikouri Tsitska 2023

Kateryna Chiganova, the founder of Mtsvane Estate winery, left her home of Ukraine over a decade ago and, along with her family, became a part burgeoning Georgian winemaking community, specializing in Sparkling Pet-Nats. The company takes pride in producing low intervention and sustainable sparkling wines from different parts of Georgia. It is a small company with a big goal: To create some of the foremost sparkling wines in Georgia.

Whole bunch grapes are pressed in closed presses without destemming. Only first run juice is used. Fermentation starts in stainless steel tanks for 7-10 days. . The wine is transferred to bottles for fermentation and storage in the cellar where the wine stays on lees for 7 months before disgorging.

Tsolikouri and Tsitska are indigenous and grown in West Georgia. Vineyard ‘Sviri2’ is at 245m (800ft). Soil is humous calcareous with quartz mica schists. Farming is low intervention with no use of pesticides and grapes are hand-picked and transported in small boxes.
