Classic European winemaking involves a combination of traditional and modern techniques. Grape pressing, fermentation, and aging are carried out with attention to detail. Many European winemakers prefer the use of natural yeasts and longer fermentation periods to enhance complexity and develop unique flavors.  The Country of Georgia has been making wine for 8000 years, most of which have followed ancient traditional, qvevri based methods.  However, in mid 1800's, several leading Georgian winemakers travelled and studied in western Europe and brought back to Georgia the classic European methods.  While many smaller and family oriented winemakers focused solely on Traditional Georgian Qvevri methods, the larger more commercial oriented winemakers would use both methods alongside each other so their wines and grape varietals could be explored and compared with both winemaking methods.
