Qvevri Wines
These are wines that are produced (fermented and/or aged) in Qvevri, which are large clay vessels buried in the ground, usually within a wine cellar that in Georgia is called a "Marani". Qvevri wines are generally Natural wines as they follow the traditional Georgian winemaking methods that include bio-dynamic, organic and sustainable farming/vineyard management, hand picking and selection, crushing or non-crushing, fermentation with skins (skin-contact fermentation/maceration) and stems, no added yeasts (only yeasts from vineyard (bio-dynamic), no additives, often no filtering or fining, and minimal sulfur levels (mostly natural sulfurs with occasional but limited added sulfur).
