This wine, of intensive amber color, bears aromas of quince couplewith those of tropical fruit. Dried figs and bee wax is felt on the entire pallet. Sweet-soft sensation with lingering finish is a unique and special taste profile for Qvevri wine.    The wine is prepared for bottling under chilling temperature to retain primary varietal aromas as well as sweet-soft taste. Bottling is done strictly under cold sterile conditions to ensure the durability of the product.

Food pairing:Serve with sweet-spicy Asian food, sweets, chocolatdessertstropical fruitcitruor pastry. Best served at 6-8 ° C (43-46F).

About the Winery

Vazisubani Estate dates back to the 19th century and traces from one of Georgia’s most storied and cherished family lines, Chavchavadze. The Estate has been meticulously restored over the last decade, emerging as a premier wine-tourism destination built around the palace, gardens, winery, marani (wine cellar) and 35 hectares of estate vineyards.

Winemaker Notes

Under watchful management of one of Georgia’s premier wine makers using state of the art facilities, harvested by hand in early morning. Fermentation is in qvevri using native yeasts and full skin contact is for six months. A unique and historic style with naturally arrested fermentation in qvevri produces special sweet-soft, extended finish, unusual for a qvevri wine. Here are the origins of this style as wild fermentation may not finish dry, but retain some natural residual sweetness.

Vineyard Notes

The grapes for this wine are sourced from the Vazisubani PDO, on the right bank of the Alazani River in the Kakheti region. Vines are planted 1500-1800feet elevation. Topsoil is 14-16inches, black to loamy; Sub-soil is white clay with stony structure laying on a limestone strata with carbonated enclaves.
